I forgot to thaw the meat for dinner last night.

Again.

So we got creative. I pulled out chicken and let it sit for about two hours. It was still frozen enough to make nice strips if Pete was cutting it (I didn't have the energy to hack through it myself...).

We sautéed it in olive oil with garlic, mesquite seasoning, salt, and pepper. Then we set it over some Naan that had been spread with dill hummus (I used regular hummus and added about 2 tsp of dill), added diced tomatoes and shredded mozzarella cheese, and served it up with steamed fresh green beans.

It took us about 30 minutes.

I like doing things on the fly.

Wish I'd thought to take a photo of it.
